Look my friend.. if you are in Olympiad.. Paladin can make On you 2 HEAL.. to mine His HP..  and then he can wear Doom heavy to Mine his HP again .. and before fight he can use Angelic Icon ;)

Imo the best tank(not as dd, but the one who can truly tank best) is tk? Why? Highest p def, tol + touch of eva, and crazy heal and cubics. Pally's ai is only good for 1 vs 1 or oly, cause it nerfes the heal effect.

Since Gracia Final, i realy dont know. Paladin is great , but SK has touch of shillien which is awesome for dmg and buffed pvp, temple knight is still a great oly farmer. I would say my favorite is SK because of hex+TOS= great DMG.
