Titan quest series - one of the best offline RPGs available :) And it has plenty of quests to do :P

 

Otherwise: The Elder Scrolls 4: Oblivion and mods/Expansions

Diablo series :}

Gothic Series are cool (but you need a serious PC to play latest ones as intended from the creators :) )

 

Try HellGate: London :) if is more futuristic but you can still run with swords shields and heavy armors pwn-ing hordes of mobs. It's quite challenging game :)
