admin .xml's

Can someone point me in the right direction. i know where the admin html's are, but i can't find the admin xml's. the files where everythig is. what i'm trying to do is make an npc with some of the lists that the admin has.....like recipes.

If u find Admin html, you find necessarily the multisell in the Html file..
