Or now wtih  Cs5 version(12) you can use Refine Edge which works really fine all you need is a nice selection around what you want to cut.It doesn't have to be perfect since Refine edge feature will do some nice work.You can view videos about it also if you're greek there's a great video tutorial about pen tool project mentioned in elislasop.com here's the link: http://vimeo.com/6824292

I think this is tara on signature (when u google it shows that images but it doesnt look like her), but i dont like that picture.
