I just upgraded my server from this setting:

 

Processor: Single Socket Quad Core AMD Opteron 1354

Windows 2003 64bit

500GB SATA HDD

8GB DDR3 RAM

100mBit Connection

 

I now have this:

 

Dell 2950 Server Chassis

Dual Processor Quad Core Intel 5335

Windows 2003 64bit

16GB DDR3 RAM

x2 300GB SATA RAID 1

T2 Connection

 

Anyone know what I can get as far as number of players online at 1 time?

700-800 players without lag, but it always depends on what company are you going to use. There are companies that gives you rootservers which suck.

depends on the datapack your pc is way more than enough for a server to host a huge server with 3K++ player with a good gameplay not a really laggy one so it depends on the datapack how much changes done for performance,stability...depends on the bugs(NPEs,deadlocks,etc)
