You can do this as a regular hero not just GM if you mount your stryder or fenir then dismount really fast. Like when you would do this to go through a wall.

Nice idea, this helps with quick leveling. You can do this also with a Dark Avenger and the cat. -
What version of L2 this working on? I'm guessing C6

On the server I've been playing on the only way I've found that you can over enchant besides a dorf was using your AIO to enchant. I have personally tried it and you have a far far far better chance enchanting with the AIO since it has all the skills on the character. Unfortunately on our server it has been caught.
